2 tbsp. olive oil
3 cloves garlic, minced
1/2 onion, sliced
1 large zucchini, spiraled or grated
1/2 cup chopped cherry tomatoes
1/4 cup cubed feta
Salt and pepper, to taste
In a medium pan over low heat, add olive oil. Let heat for 1 minute. Add minced garlic to oil. Use a spoon or spatula to stir garlic to keep it from sticking to the pan and burning. When garlic becomes fragrant, add onion and stir. Cook until onions become soft and slightly brown, 4–5 minutes.
Place zucchini “noodles” in a large bowl. Pour onion-garlic mixture over zucchini, add tomatoes and cheese, and toss gently to combine. Season with salt and pepper. Dig in!
