Swap high-calorie mashed potatoes for this delicious low-calorie favorite made from cauliflower. With only 100 calories per serving this easy-to-make dish will help you eat off the pounds during the holidays. 

INGREDIENTS:

1 head of cauliflower
1/2 cup Silk unsweetened almond milk
1 teaspoon coconut oil
2 tablespoons light sour cream
1/4 teaspoon garlic salt
Freshly ground black pepper
Chives, thinly chopped
Optional: 1 tablespoon of Earth Balance Organic Coconut Spread

INSTRUCTIONS: 
1. Steam cauliflower for 12–15 minutes or until very tender.
2. Drain and dry cauliflower, and transfer to large bowl.
3. Add the milk, oil, sour cream, salt and pepper, then mash until smooth.
4. Top with chives.
