3 mashed bananas

1 tablespoon coconut yogurt

1 teaspoon vanilla extract

1/2 cup stevia

1 dash salt

1 teaspoon baking powder

2 tablespoons Silk unsweetened almond milk

3/4 cup gluten-free buckwheat flour (Arrowhead Mills)

1 cup blueberries



1. Preheat oven to 350°F.

2. Spray two mini-baking pans with nonstick cooking spray.

3. Place all ingredients in a medium-sized mixing bowl, except flour and

blueberries, then mix until smooth.

4. Add flour and stir until just barely incorporated, then add blueberries.
