Cocoa Bean Brownies
1 (14 oz.) can black beans, drained & rinsed
2 large eggs
½ cup applesauce, unsweetened
15 small dates, pitted (½ cup packed)
2 Tbsp. brewed coffee (optional)
1 tsp. pure vanilla extract
½ cup cocoa powder
1/4 tsp. salt
½ tsp. baking soda
½ cup + ¼ cup dark chocolate chips
Preheat the oven to 350 degrees F.
Line an 8 x 8 square baking dish with parchment paper and spray with cooking spray.
Add all ingredients, except chocolate chips, to a blender. Blend until smooth.
Add ½ cup chocolate chips and stir to mix. Pour batter into baking dish, top with ¼ cup chocolate chips. Bake for 30 minutes.
Remove from the oven and let brownies cool completely.
Cut into 16 squares and serve.
Banana Berry Ice Cream
1 1/2 medium bananas, peeled, sliced, and frozen until solid
1/3 cup chopped frozen strawberries
2 tbsp. heavy whipping cream
Place frozen bananas in a blender. Mix until they are the consistency of soft serve ice cream. Add strawberries and cream and blend until smooth.
Transfer mixture to a freezer container and freeze until solid. Serve when completely frozen. Enjoy!
